Creamy Wild Mushroom Pizza

Golden chanterelles bring their forest fragrance to this rich and comforting pizza — a creamy, cheesy twist on a classic favourite. Instead of tomato sauce, a base of ricotta, Parmesan, and mozzarella highlights the chanterelles’ delicate aroma and buttery texture. Sautéed with garlic and thyme, they create the perfect topping for a golden, woodsy pizza that’s both refined and rustic.

Ingredients

  • 1 lb pizza dough, room temperature
  • 1 lb fresh chanterelle mushrooms, cleaned and cut into bite-sized pieces
  • 2 Tbsp butter
  • 2 Tbsp olive oil, divided
  • 2–3 garlic cloves, minced, divided
  • ½ cup ricotta cheese
  • ½ cup grated Parmesan cheese, plus extra for finishing
  • 1 cup shredded mozzarella cheese
  • 1 tsp fresh thyme leaves, plus extra for garnish
  • Salt and freshly ground black pepper, to taste
  • Fresh dill or arugula for garnish (optional)

Preparation

Prepare the chanterelles
Preheat your oven to its highest setting (475–500°F / 245–260°C) with a pizza stone or baking sheet inside.
In a large skillet, melt the butter with 1 Tbsp olive oil over medium-high heat.
Add the chanterelles and sauté until they release their moisture and begin to brown.
Stir in 1 minced garlic clove and the thyme during the last minute of cooking.
Season with salt and pepper, then set aside.

Prepare the base
On a lightly floured surface, stretch the pizza dough and transfer it to a pizza peel or a parchment-lined baking sheet.
Brush the dough with the remaining olive oil and a pinch of salt.
In a small bowl, mix the ricotta with half of the Parmesan cheese, then spread evenly over the dough.
Top with mozzarella and the sautéed chanterelles.

Bake and finish
Transfer the pizza to the preheated oven and bake for 10–15 minutes, until the crust is golden and the cheese is bubbling.
Remove from the oven and garnish with fresh thyme, a sprinkle of Parmesan, and, if desired, dill or arugula.
Finish with a light drizzle of truffle oil for an extra touch of indulgence.

Serve immediately and enjoy a slice of creamy forest flavour.
