Spruce Tip-Infused Vodka

If you could find a way to fit the lush green forests of Vancouver Island into a bottle, this recipe would be it. This bright, almost lemony spruce tip vodka is well worth the time it takes for the spruce tips to infuse and steep. All you need is a batch of our hand-picked, feathery young spruce tips and a bottle of your favourite vodka, and you’re all set. Spruce tip vodka makes a unique and delightful gift for cocktail lovers, too.

Ingredients

  • ½ lb fresh spruce tips
  • 750 ml bottle of your favourite vodka

Preparation

Remove brown husks, if any, from the spruce tips then quickly rinse tips in a colander under cold running water.

Place the rinsed tips in a large 1-qt mason jar and pour in vodka (save the vodka bottle for using later). Seal the jar and place it in the refrigerator. Let the concoction steep/infuse for a full month in the fridge. Once ready, strain the infused vodka through a fine mesh sieve and pour it back into your original vodka bottle.

Spruce tip vodka has a bright, citrusy and lightly resinous flavour. It’s lovely straight on ice, with tonic water, or create your own unique forest-inspired cocktail.

Tip! For a quicker infusion (one week instead of one month) you can chop (or use a blender) your spruce tips finely before infusing into the vodka. It results in a stronger flavour in less time. It also results in more tannins in the infusions, which might not please everyone, but will be sure to please strong botanical fans.
